My family visited a local sugar shack last Sunday. Their season started late as well such that they ran out of product to sell to the public. They are producing more this week, but there is another factor as well. Normally, the sap needs to be reduced 40 times. This year, the ratio is only 35:1 or perhaps 32:1. The run may not last as long, but they may get the same amount of syrup.
